Technical aspects
Pistachio Kernels are available in different sizes: Large Whole (min. 80%), 60% Large Whole (min. 60%), Whole and Broken (min. 40%), and Large Pieces (max. 39%). All varieties undergo metal detection screening to ensure product safety. The roasting process is carefully controlled, with moisture levels ranging from <4.5% for unsalted varieties to 2.0–3.5% for signature roasted pistachios. The product meets strict quality standards, with free fatty acid content ≤ 1.5% and a peroxide value ≤ 5 meq/kg.
