Technical aspects
Carob powder is characterized by a particle size of 98% < 75 microns and a bulk density of 550 kg/m³. It contains less than 4% moisture, approximately 48% carbohydrates, and ~40% dietary fiber, with a fat content of ≤1%. The product is free from allergens and GMOs, complies with EU food safety standards, and is microbiologically safe (no salmonella or E. coli). Water solubility is 50–60%, and the pH is between 5 and 6.
